How to Make it

  • Blend together all sauce ingredients and set to one side. (This can be made and stored in the fridge in a tightly sealed container for up to three days and served either warm or cold.)
  • Preheat oven to 180°C (350°F).
  • Slice cauliflower into 4 - 8 large slices. You want them to be about 1 inch thick.
  • Place cauliflower on a baking tray lined with baking paper in a single layer; use two trays if necessary.
  • Drizzle with olive oil and season with salt and black pepper.
  • Roast in the oven for 20 minutes. Remove and flip the cauliflower over. Roast for a further 10 - 15 minutes, until tender and nicely charred.
  • Whisk together the tahini, lemon juice, and water and season to taste in a small bowl.
  • Serve steaks with warm or cool Romesco sauce, garnish with your herb of choice, and top with toasted flaked almonds. Add a dollop of tahini dressing and garnish with a little more black pepper (only if desired).
  • *If roasting your own, be sure to peel off the charred skins!
