How to Make it

    • Rinse the lentils and set aside. 
    • Heat the olive oil in a large pot over medium heat. 
    • Add the onion, garlic, carrots, and celery, and cook until the vegetables are softened, about 5-7 minutes. 
    • Stir in the diced tomatoes, broth, cumin, thyme, salt, pepper, and bay leaf. 
    • Add the lentils and bring to a boil. 
    • Reduce heat to a simmer and cook for 25-30 minutes, or until lentils are tender. 
    • Remove the bay leaf and adjust seasoning as needed. 
    • Garnish with fresh parsley before serving, if desired.
