Ingredients
- 1 cup dried lentils
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can diced tomatoes (14.5 ounces)
- 4 cups vegetable or chicken broth
- 1 teaspoon ground cumin (14.5 ounces)
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 1 bay leaf
- parsley (optional, for garnish)
How to Make it
- Rinse the lentils and set aside.
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots, and celery, and cook until the vegetables are softened, about 5-7 minutes.
- Stir in the diced tomatoes, broth, cumin, thyme, salt, pepper, and bay leaf.
- Add the lentils and bring to a boil.
- Reduce heat to a simmer and cook for 25-30 minutes, or until lentils are tender.
- Remove the bay leaf and adjust seasoning as needed.
- Garnish with fresh parsley before serving, if desired.
