Penne, fusilli, spaghetti and lasagne sheets in brown rice, maize and buckwheat. Asian noodles: brown rice, black rice, vermicelli and buckwheat soba.
The flours behave differently. Rice pasta holds its shape best and is the closest to standard in texture. Maize and rice blends taste nearer to durum wheat. Buckwheat is nuttier and darker — and despite the name, buckwheat isn't wheat at all and contains no gluten. Bean and lentil pastas carry noticeably more protein and fibre.
Worth knowing: most soba noodles are cut with wheat flour. Only ones labelled 100% buckwheat are gluten free.
