Carrot and Oat Energy Bites*

A snack for a healthy gut, this recipe is a rich source of dietary fibre - aiding digestion and supporting the diversity of the gut microbiome - and includes vitamin A in the form of beta-carotene, which is important for stimulating production and activity of white blood cells for immune function.

Ingredients

    1 cup of oats

    ½ cup chia seeds or protein powder of choice

    7 medjool dates pitted

    ½ cup grated carrots

    4 tbsp honey

    1 tsp cinnamon or ginger

    1 tbsp desiccated coconut

    1 tbsp cacao powder

How to Make it

    Prepare the dates: If your dates are firm, soak them in warm water for 5 minutes, then drain.

    Blend the dry ingredients: Add oats, chia seeds or protein powder and cinnamon or ginger to the food processor. Pulse until the mixture becomes a grainy blend.

    Add the wet ingredients: Add the pitted dates, grated carrots, and honey. Blend until the mixture comes together and forms a sticky dough.

    Check the texture: If it’s too dry, add a little more honey or a splash of water. If too wet, add extra oats.

    Shape the bites: Scoop out 1 tbsp portions and roll into balls with your hands.

    Coat the bites: Roll each ball in cacao powder followed by desiccated coconut, or a mix of both.

    Chill to set: Place the coated bites in the fridge for at least 20–30 minutes to firm up.

    Storage

    Keep in an airtight container in the fridge for up to one week.

    Alternatively freeze for longer storage.
