Jackfruit Tacos

Ingredients
- 1 can (20 ounces) young green jackfruit in water or brine, drained and rinsed
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground coriander
- Salt and pepper, to taste
- Taco shells or tortillas
- Toppings: avocado, salsa, cilantro, lime wedges
How to Make it
- Drain and rinse the jackfruit, then cut off the core and any hard pieces.
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic, and sauté until softened, about 5 minutes.
- Add the jackfruit to the skillet and cook for 5 minutes.
- Stir in the cumin, smoked paprika, chili powder, coriander, salt, and pepper.
- Cook for 10-15 minutes, stirring occasionally, until the jackfruit is tender.
- Use two forks to shred the jackfruit.
- Serve in taco shells or tortillas with your favorite toppings.
