Most stock cubes are vegan even when they're labelled chicken or beef — the flavour usually comes from yeast extract and seasoning rather than meat. That said, some carry lactose or animal fat, so it's worth checking rather than assuming.

Bouillon powder dissolves straight into liquid and is easier to use by the spoonful; cubes are portioned. Instant miso is the Japanese alternative — fermented soya paste rather than a cube. Don't boil miso, it kills the live cultures; stir it in at the end.
